The alpha-glucosidase inhibition mechanism in Jun is the same as that exploited by the diabetes medication acarbose. Finished Jun shows approximately 3 to 4 times higher alpha-glucosidase inhibition than commercial kombucha. Alpha-glucosidase inhibition slows carbohydrate absorption and stabilizes blood glucose response after meals.
