Organic egg certification guarantees feed quality but does not certify housing conditions; some organic chickens are still caged. Vegetarian feed is not a positive marker for egg quality because chickens evolved as omnivores that eat insects, worms, and small protein sources. Conventional chickens fed GMO corn and soy produce eggs significantly higher in pro-inflammatory omega-6 fatty acids. Commercial egg yolk color is often produced by synthetic carotenoid colorants added to feed and does not reflect genuine carotenoid content. 65% of all eggs consumed in the US are conventional caged eggs.
