Jaggery

Dataki flowers carry natural wild yeast analogous to wine yeast and are traditionally added as a fermentation primer. Using refined sugar substitutes in place of jaggery invalidates the traditional recipe. Jaggery cannot be substituted with white sugar because its trace minerals, polyphenols, and enzymes affect both the fermentation process and the final product's compound profile.
