Lingual Lipase

Lingual lipase activity during oral digestion is exclusive to coconut oil among common dietary fats. Lingual lipase specifically breaks down only short and medium chain fatty acids. The interaction between lingual lipase and coconut oil is described as the key reason coconut oil works well for oil pulling. Lingual lipase triggers antibacterial properties when it comes into contact with coconut oil. Lingual lipase is released by sublingual glands located underneath the tongue. The sublingual glands beneath the tongue release lingual lipase.
