Lipase

The pancreas releases lipase, which further breaks down fats into small particles the body can absorb. Pancreatic lipase hydrolyzes emulsified fat particles into glycerol and fatty acids. Pancreatic lipase acts in the duodenum after bile has already emulsified the fat.
