Cabbage is a significant source of glutamine, the primary therapeutic nutrient for leaky gut and intestinal permeability. Raw fermented cabbage is comparable in bacterial count and species diversity to high-end probiotic supplements, at a fraction of the cost. One cup of raw sauerkraut contains approximately 700 mg of vitamin C, roughly 7–10 times the standard RDA. Pasteurization destroys the therapeutic benefits of sauerkraut; only raw, unpasteurized versions retain its full nutritional value. The brine left after finishing sauerkraut is concentrated with probiotics and functions similarly to dairy-free kefir for gut microbiome support.
