Children are far more vulnerable to solanine, with a lethal dose of only 20–40 mg. The lethal dose of solanine for adults is 200–400 mg. Solanine is colorless; the green color of potatoes comes from chlorophyll, which co-develops with solanine and serves as a proxy indicator. Solanine inhibits acetylcholinesterase, disrupting nerve signal transmission, and also disrupts cell membranes. Green or sprouted potatoes should be discarded entirely rather than peeled and eaten. Cooking does not destroy solanine.
