Streptococcus mutans

Streptococcus mutans is the primary bacterium responsible for cavity formation. S. mutans produces acid through sugar fermentation, which demineralizes the mineral structure of the tooth and creates a cavity. When sugar and fermentable refined carbohydrates are consumed, S. mutans proliferates until it dominates the oral microbiome.
