Tannins

Tannins are responsible for the brown coloration that characterizes the later stage of leaf senescence. Tannin levels spike in leaves as temperatures drop further into the colder part of fall. Tannins are a broad class of plant polyphenols with astringent properties that also function as antioxidants.
