Virtually all wasabi served in sushi restaurants globally is not derived from the real wasabi plant. An estimated 95% of wasabi sold worldwide, including in Japan, is a horseradish-based imitation. Fresh grated wasabi paste loses its flavour within 15 minutes of preparation. Real wasabi wholesale costs approximately $160 per kilogram.
